Quick and Creamy Fresh Broccoli Salad

One of the best kept secrets, in my opinion, is the freshly prepared food found in Super Targets.  While every area doesn’t have these cavernous superstores (which I loathe), if you pass one – check out the deli section!

Like I said, I’m not a huge fan of going to superstores as I feel totally overwhelmed and underwhelmed at the same time.  Give me a corner grocery anytime!  But sometimes you must, and when I did I found myself discovering something amazing: Target’s fresh broccoli salad!

I was in the neighborhood and thought I would pop in to grab a small tub for dinner….but they were out!  Thus I was forced to come up with my own version of this luscious side-dish….and here it is!  This is my “Lite” version.  Come on…we need to slim down to be ready for those holiday pounds right?

What you need:

*1-2 Medium Heads of FRESH Broccoli

*1/2 Cup Minced Vidalia Onion

*1/4 Cup Minced Red Pepper

*1/2 Cup Lite Sour Cream

*2 Tablespoons (+) Garlic Infused Olive Oil

*1 Teaspoon of Garlic Salt

*Salt and Pepper to Taste

This sucker is pretty easy to make.  Wash, drain and then break off the broccoli into BITE SIZED florets. Get a large mixing bowl and add the broccoli, onion, red pepper,  garlic oil, sour cream, garlic salt, pepper (basically all the ingredients) and toss until fully incorporated.  Taste to see how it needs to be adjusted.  Refrigerate for at least and hour and serve within 48 hours for the best flavor!

      Thanks Heather! The broccoli salad is definitely one of my favorites…probably because it is so simple. When I go to Target, I have to totally avoid the food section or I will end up with a couple tubs of their version of the broccoli salad. Its worth a try…but better to make it fresh at home I always say! Let me know how the recipe turns out!
