Garlic Infused Olive Oil

When we talk about cooking mainstays or must-haves, I have to say this is near the top of the list next to salt and pepper.  If you have been in any fancy grocery store, you have surely seen the infused olive oils with the fancy labels and high price tags.  You may have been interested in trying them out….but the price may have scared you off.  You’re not alone!  I always refuse to pay high prices for something that is simple to make.

Now – this is my quick and easy recipe for Garlic Infused Olive Oil.  But you can be as creative as you like.  Substitute rosemary, parmesan, basil, oregano, chili….and the list goes on.  Here is how to do it quick and easy with garlic, then try your own concoction!

*1 Small Mason Jar (or Small Oil Decanter)

*1-1/2 Cup Extra Virgin Olive Oil

*1 Head Minced Garlic

Ok.  Simple stuff here.  Clean the garlic and finely mince.  Add to the mason jar/container and then cover to within an inch of the top.  Seal.  Shake and leave in a dry, cool place for 24 hours.  Give it a shake and leave for another 24 hours.  It should then be ready to use.

Now WHAT do you use this for?  It is a perfect substitute for anytime you would use olive oil for cooking.  Also alone it is a wonderful salad dressing.  I think my favorite is I use it in my homemade pizza dough – it is killer!

Once you use all of the oil, you can fill it once more.  When you are done with the second batch, I suggest making a fresh batch.  This does NOT need to be refrigerated, so leave in your spice cupboard and grab for it when you need it.  Simple, impressive and can make the stalest house smell like a bustling Italian restaurant.
