Don’t you just love when you go to a restaurant and they give you that hot basket full of bread and a plate with dipping sauce? It seems like every restaurant does it, but why not do it for yourself at home.
I’m a HUGE fan of infused oils (at the moment I have a jar of garlic infused olive oil and rosemary and parmesan olive oil in the cupboard). These are great for a number of reasons. You can make any sautee a little extra special, a salad come to life….but what I want to talk about here is making the best dipping sauce.
This recipe makes quite a bit, but you can keep it in the refrigerator and use it as you need it. The longer it infuses, the more delicious it becomes. But once you put it together, you will be desperate to find something to dip in it!
Here’s the shopping list:
*3 Cups Extra Virgin Olive Oil
*1.5 Cup Balsamic Vinegar
*8 Cloves of Garlic
*4-6 Tablespoons of FLAT LEAF Parsley (this is the only kind to use in my opinion)
*1 Cup Parmesan Cheese (any kind will do)
*2 Tablespoons of Italian Seasoning
*1 Tablespoon Ground Pepper
*1 Teaspoon of Salt (or garlic salt if you want to kick it up a notch)
Alright….how easy is this. Put the parsley, garlic, italian seasoning, pepper and salt in a food processor into throughly blended. Not a food processor person – mince the garlic and parsely and then just mix together.
In an airtight container, combine all of the ingredients. There is a lot of liquid here, so make sure that you have a container that is both large enough and convenient enough for serving. If you want to make less, just half the recipe – but I think hey, what the heck. I’m making it anyway – let’s make a large batch!
Use this with salads or serve with a nice hot slice of bread. Delicious!
