Something that I hear again and again from friends, family, listeners and everyone in between is that “I love to cook, but I just don’t have time.” I have to say that I completely understand. Running my online marketing firm, Go! Media, is definitely a full-time job. But the difference for me is that I can actually relax, meditate and center myself when I am in the kitchen. To be honest, cooking and entertaining are two of my most favorite things to do.
But I know this isn’t the case for everyone. As we are in the midst of a killer winter, I thought I would unlock one of my most precious soup recipes that will not only impress, but have you in the kitchen for about…..ah….5 minutes! Yep, now you’re listening!
This is the recipe for my tomato garlic soup. It is absolutely delicious, heart warming and sharable and works as part of a coursed meal or as a meal on its own.
This recipe will give you 4 servings as a entree, or 8 as a starter. Let’s hit the shops!
*4 cans of diced tomatoes
*1/2 cup of cottage cheese
*1/4 parmesan cheese
*1 tablespoon dried garlic
*freshly ground salt and pepper to taste
Now the secret to this soup is two machines: a slow cooker and a blender.
First, grab your slow cooker and set it to low or medium heat. Then add all of the ingredients, pop the top on, and do NOT disturb for at least 4 hours. If you want to get this together in the morning, just set it to low and leave it on until you get home.
When the time is up, dump the mixture in batches into the blender until smooth. You can also use a hand blender for this (which I prefer as less cleanup). Once blended, check for spice and then ladle into bowls, top with croutons and DONE!
I have to say, it can warm you up, keep your waistline down and satisfy your hunger.
